Hx3: Homemade, Healthy & Hearty Soup

Hello loves! Today is a short and sweet (actually hearty) post! It has been a cold and rainy winter here on the east coast, I found myself making this soup a lot! It's my go-to healthy soup. It packs a punch of vitamins and minerals we need to stay feeling and looking great. It's colorful and so enjoying to much on! The recipe is very easy and practical. You can easily hit up your local grocery store to get all the ingredients and cook it... all under two hours! Add some crackers, or your favorite bread for dipping and you are good to go!

Homemade Hearty Soup Recipe:

-12 ounces of organic vegetable broth
-8 ounces of water
-4 tablespoons of olive oil
-5 cloves of garlic
-1 large red onion
-1 large can of organic or freshly made tomato sauce
-5 organic celery stalks
-5 organic large carrots or 1/2 a bag of organic carrot sticks
-5 organic sweet potatoes
-2 diced organic medium size tomatoes
-2 cans of cooked lentils or peas
-1 handful of parsley
-2 pinches of black pepper
-1 pinch of cayenne pepper
-2 pinches of himalayan pink salt

Put the broth, olive oil, tomato sauce, garlic and onion in the pot first. Add the rest as you please. I normally put the peas/lentil in second to last because I do not want them to loose too much texture. Add spices! Serve while hot/warm! If you are looking for a little something else, add some vegan cheese and crackers! Daiya is a really good vegan cheese brand! Mary's Crackers is a delicious seed/grain based cracker brand! Both are vegan and gluten free! Enjoy!
